For our inaugural post in this series, we’re featuring Santoña Anchovies, Melon and Pistachios. To make this dish, you’ll need 10 minutes and the following:
4 Santoña anchovies
Grated lemon zest
Green pistachios that are finely chopped and peeled
1/4 lb. of melon
First dice the melon, then place an anchovy on each piece. Run a skewer through each piece and sprinkle the lemon zest and chopped pistachios on top. Quick and delicious!
